In today’s fast paced, highly stressed world many families do not get the quality time that is required to enjoy time around the dinner table. The abundance of fast food options make it tempting to go for the easy option, rather than set aside the time to prepare wholesome and nutritious dinners. Fortunately there are some great home cooked food recipes that require only minutes to prepare and make dinner time a pleasure.
Shrimp and Leek Pasta
Pasta is a family favorite and this great tasting and simple pasta recipe takes under 20 minutes to prepare and provides a delicious seafood snap to any family dinner. Use any short type pasta (fusilli is a winner).
You’ll need two leeks, around a pound of medium shrimps (try and get fresh) and a handful of spinach. Heat two tablespoons of butter and saute the leeks then add the shrimps and spinach. Add three quarters of a cup of fresh cream and season with kosher salt and pepper to taste. Some lemon zest will really make the flavors pop – add this a minute or two prior to serving. A great, low calorie meal for the whole family.
Salmon And Bok Choy
Salmon is a great fish to make for dinner. Not only is it healthy, but it also combines well with a number of green leafy vegetables. This recipe supplies the rich flavor of honey basted Salmon, soy sauce and red peppers to give it an oriental inspired flavor that the whole family will love. Use skinless Salmon fillets and baste the fish with a honey, soy and diced red pepper emulsion. Bake on foil for around ten minutes while also basting with more honey midway through the cooking process. Cook up long grain rice to serve as a bed for the fish and steam baby Bok Choy for about 8 minutes. Then serve. This recipe takes around 30 minutes and is a refreshing alternative to heavy evening meals – and the taste is clean and delicious.
Baking means that this dish is healthy, while the addition of grated pecorino adds a zest to the dish that lifts it from the ho hum to the delicious. You’ll need boneless chicken breasts, some sandwich bread, half a cup of grated pecorino and some Swiss Chard cut into strips (you can substitute baby spinach if you’d like). Pulse the bread to provide the coating and add two tablespoons of butter, a dash of salt and pepper and the pecorino. Sprinkle the coating over the chicken and bake for twenty minutes (covering with foil). About five minutes before the chicken is ready use two tablespoons of olive oil to saute the chard (or spinach). A great, healthy dinner dish for the whole family.
