1. Vegetable Chicken Nuggets
Fried chicken nuggets and pops are firm favorites for kids and adults. Upgrade your recipe to provide a healthier and more nutritious option.
- Minced or finely chopped chicken breast meat
- 2 Eggs, beaten
- Flour mixed with seasoning spice to flavor
- Bread Crumbs
- Broccoli, cauliflower, gem squash or carrots
Cook one or more of the vegetables until soft and mash with a fork. Stir this into the minced or finely chopped chicken breast meat until evenly distributed. The chicken should compliment or even disguise the flavor of the veg for fussy eaters.
Roll teaspoon amounts of the mixture between your palms to make balls. Cover the chicken balls in the seasoned flour and flatten between the palms of your hands. Ensure that the flour is well seasoned as this is where the flavor will come from.
Dip the flattened balls into the whisked egg and then directly into the bread crumbs ensuring that they are evenly covered. Place the chicken nuggets on a baking tray and cook in preheated oven at 180 C (350 F) for 10-15 minutes, turning once midway through the allotted time. The crumbs should be golden brown and the chicken cooked through.

2. Fish Pie
Fried fish, baked fish and steamed fish can become very boring. Upgrade your current fish recipe and make a pie:
- 250 g White Fish Fillets
- 200 ml Milk
- 1 Tablespoon Butter
- 1 Tablespoon All Purpose Flour
- 1/2 Onion
- 50g Grated Cheddar Cheese
- Salt and Pepper
- 5 Medium Potatoes, peeled and cubed.
- 2 Tablespoons Butter
- 2 Tablespoons milk
Place the milk, sliced onion, salt and pepper in a pot and bring to the boil. Add the fish fillets and cook for 2 minutes with the lid on. Remove from the heat and allow to stand while the fish continues to slowly cook in the hot milk. Remove the fish and onions by straining the mixture. Keep the milk to one side.
While the fish is standing, boil the potatoes until soft. Strain any remaining water out and add the butter and milk with a little salt for taste. Mash together to a smooth consistency with no lumps.
Place the butter and flour in a saucepan and stir together while allowing to cook for a couple of minutes. Slowly pour in the reserved milk from boiling the fish, continuously stirring until you reach a thick consistency, stir in the cheese until melted.
Place the cheese sauce in a pie or other oven proof dish. Break the fillets into the sauce. Spread the mashed potato evenly over the filling and bake in a preheated oven at 200 C (400 F) for 20 minutes or until the crust is golden brown and the filling bubbles.
